Corned Beef and Cabbage

Ingredients:

  • 1 3- to 4-pound package corned beef brisket

  • Freshly ground pepper

  • 1 cup balsamic vinegar

  • 2 tablespoons sugar (optional)

  • 1 head green cabbage

  • 2 tablespoons extra-virgin olive oil

  • Kosher salt

  • 12-ounce bottle Guinness or other stout
